Gingerbread is a festive season classic and these cookies are a fun family holiday activity.
Ingredients:
- 2 cups flour
- ½ tsp baking soda
- 1 Tbsp ground ginger
- 1 cup firmly packed brown sugar
- 150 g butter
- 1 egg, beaten
- ½ cup icing sugar
METHOD:
- Preheat your oven to 180°C. Line baking trays with baking paper.
- In a bowl, sift the flour, baking soda and ginger together.
- In a separate large mixing bowl, beat the softened butter and brown sugar until creamy. Add the egg and mix until smooth and well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until it forms a dough. If it’s sticky, add a little more flour until it’s easier to handle.
- Wrap the dough in cling film and chill it in the fridge for about an hour. This makes rolling it out easier.
- On a floured surface, roll out the dough to about 5mm thick. Use Christmas-themed cookie cutters to cut out cookies, placing them on the lined baking trays.
- Bake for 8-10 minutes, or until edges are just golden. Let the cookies cool on the trays for a few minutes, then transfer to a wire rack to cool completely.
- Make icing by adding 1-2 tsp water to icing sugar until it reaches desired consistency. Transfer icing to a piping bag.
- Once cookies are cool, decorate with icing, sprinkles, or edible glitter to add a festive touch to your yummy treats.
