Cookie Time | Christmas Gingerbread Edition

Gingerbread is a festive season classic and these cookies are a fun family holiday activity.

Ingredients:

  • 2 cups flour
  • ½ tsp baking soda
  • 1 Tbsp ground ginger
  • 1 cup firmly packed brown sugar
  • 150 g butter
  • 1 egg, beaten
  • ½ cup icing sugar

METHOD:

  1. Preheat your oven to 180°C. Line baking trays with baking paper.
  2. In a bowl, sift the flour, baking soda and ginger together.
  3. In a separate large mixing bowl, beat the softened butter and brown sugar until creamy. Add the egg and mix until smooth and well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until it forms a dough. If it’s sticky, add a little more flour until it’s easier to handle.
  5. Wrap the dough in cling film and chill it in the fridge for about an hour. This makes rolling it out easier.
  6. On a floured surface, roll out the dough to about 5mm thick. Use Christmas-themed cookie cutters to cut out cookies, placing them on the lined baking trays.
  7. Bake for 8-10 minutes, or until edges are just golden. Let the cookies cool on the trays for a few minutes, then transfer to a wire rack to cool completely.
  8. Make icing by adding 1-2 tsp water to icing sugar until it reaches desired consistency. Transfer icing to a piping bag.
  9. Once cookies are cool, decorate with icing, sprinkles, or edible glitter to add a festive touch to your yummy treats.
