Autumn is such a great time for fruit, and these healthy little crumbles are naturally sweet and full of goodness.
(Makes 6 small ramekins)
Pre-heat oven to 180 fan bake.
Mix FILLING together in a bowl and divide between oven-proof ramekins. Feel free to leave the skin on fruit as it’s full of extra nutrients.
- 2-3 Large Matakana Persimmons diced
- 2 Apples diced
- Juice from 1 lemon
- 3 Tbs runny honey (if using a thicker honey, gently warm)
Crumble TOPPING ingredients in a bowl with your fingers and pat firmly on top of filling. Note you may want to double if using a wider neck ramekin.
- 1 cup flour
- 1/2 cup oats
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 2 Tbs coconut sugar (or raw)
- 120g butter (or swap for 1/2 cup coconut oil)
Cook for 25-30 minutes until golden on top.
