Sneak some veggies into snack time with these beetroot bliss balls that the kids will absolutely love.
Makes 10 balls
- 1 cup almonds
- 1 tbsp cacao powder
- Pinch of sea salt
- ½ cup of dates
- 1 tsp vanilla extract
- ¼ cup raw grated beetroot
- 1-2 tsp honey (optional)
- ¼ cup desiccated coconut (optional)
Blend the almonds, cacao powder, and sea salt in a blender or food processor until they resemble fine crumbs. Add the dates, vanilla extract, and raw beetroot and pulse to combine. Taste the mixture and add in the honey if you prefer it a little sweeter.
Take 1 tablespoon of mixture and roll it into a ball. Roll each ball in desiccated coconut and store in the fridge or freezer.
