Pea fritters

A healthy addition to a lunch box for school aged kids.


• 2 cups frozen peas, defrosted
• 2 eggs
• 1 spring onion
• 1 tsp mixed herbs
• ½ tsp garlic powder
• Zest of half a lemon
• ½ cup buckwheat flour
• ½ tsp sea salt
• 1 tbsp oil

You could use any other type of flour flour: rye, wholemeal, rice etc.


> Blend or mash the peas and mix with the eggs, spring onion, herbs, garlic powder, lemon zest, buckwheat flour, and sea salt.
> Heat the oil in a pan on medium heat. Add a heaped tablespoon of the mixture and flatten with a fork or spatula. Cook for approximately two minutes, then flip. Serve warm.
