Coconut rice pudding
- 1.5 cups brown rice, cooked
- 1 tin of coconut milk (225ml)
- 1/2 tsp cinnamon
- 1 tbsp honey
- 1/2 tsp vanilla extract
1. Mix together rice, coconut milk, cinnamon, honey, and vanilla in a small saucepan and simmer on the stove, stirring frequently (to avoid burning on the bottom) for 5-8 minutes until thick and creamy.
2. Spoon into bowls and serve warm or cooled.
Facts: brown rice is high in B vitamins, magnesium, and fibre, and is low in glycemic index, meaning it will help to stabilise blood sugar levels and keep your kids feeling full and satisfied.
