Simple and healthy with brown rice

Brown rice is a fantastic gluten-free grain that is so versatile and can be used in so many different recipes, sweet and savory! Nutritionist Chloe Moir shares a coconut rice pudding recipe to try with your kids.

Coconut rice pudding


  • 1.5 cups brown rice, cooked
  • 1 tin of coconut milk (225ml)
  • 1/2 tsp cinnamon
  • 1 tbsp honey
  • 1/2 tsp vanilla extract


1. Mix together rice, coconut milk, cinnamon, honey, and vanilla in a small saucepan and simmer on the stove, stirring frequently (to avoid burning on the bottom) for 5-8 minutes until thick and creamy.

2. Spoon into bowls and serve warm or cooled.
