Green pasta with coconut milk

Sneak some greens into this delicious coconut pasta dish for your kids.

Serves: 4


  • 4 garlic cloves, minced
  • 1 tsp extra-virgin olive oil
  • 400ml tin coconut milk
  • 1 tbsp lemon juice
  • 1 tsp ground ginger
  • 2 cups fresh spinach leaves
  • 400g pasta
  • 2 tbsp soy sauce


> Pan-fry the minced garlic with olive oil until golden brown.

> Add the coconut milk, lemon juice, and ground ginger and cook over medium heat for at least five minutes.

> Transfer to a blender and add the spinach. Blend until smooth.

> Cook the pasta according to package directions.

> Drain the pasta and pour it into the pan with the spinach sauce. Add soy sauce and mix well.

Cook for a further five minutes, then serve warm.
