When life gives you lemons

When winter hits, so do the sniffly noses, sore throats, and colds. Lemons are a fabulous source of vitamin c, minerals, and antioxidants. Nutritionist Gina Urlich (nutritionbyginarose.com) shares three lemon recipes that will boost your kids’ immune systems this winter.

Soothing immune drink

You need:

  • 2.5cm piece of fresh ginger root (no need to peel it)
  • 1 cup water
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp honey

How to make:

  1. Place the water into a saucepan. Grate the ginger into the water, then boil for five minutes. Remove from heat.
  2. Let the water cool enough to be able to drink, then strain and pour into a mug. Add lemon and honey, and mix well until the honey dissolves.

Tip: Don’t add the lemon or honey to the boiling water, as this will destroy the vitamins and minerals in the lemon and honey.

Lemon and chia seed loaf

You need:

  • 1½ cups almond meal
  • ¼ cup coconut flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 3 eggs
  • ¼ cup honey
  • ¼ cup coconut oil or butter
  • ½ cup lemon juice
  • Zest of 2 lemons
  • ¼ cup milk
  • 1 tbsp chia seeds

How to make:

  1. Preheat oven to 180°C and line a loaf tin with baking paper. Set aside.
  2. In a large bowl, combine almond meal, coconut flour, salt, and baking soda. Stir together.
  3. Add the eggs, honey, coconut oil or butter, lemon juice, lemon zest, and milk. Stir until smooth.
  4. Add in chia seeds and pour the mixture into the loaf tin. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. The edges should be slightly brown.

Zesty lemon bliss balls

You need:

  • 1 cup cashew nuts
  • 1 cup desiccated coconut
  • Zest of one lemon
  • Juice of half a lemon
  • ½ tsp vanilla extract
  • Pinch of salt
  • 2 tbsp honey
  • Extra desiccated coconut for rolling

How to make:

  1. Place the ingredients into a food processor and blend until the mixture resembles sticky crumbs.
  2. Use your hands to shape the mixture into balls.
  3. Roll the balls in the extra desiccated coconut and place in the fridge to set.
  4. Store bliss balls in an airtight container in the fridge.
