When winter hits, so do the sniffly noses, sore throats, and colds. Lemons are a fabulous source of vitamin c, minerals, and antioxidants. Nutritionist Gina Urlich (nutritionbyginarose.com) shares three lemon recipes that will boost your kids’ immune systems this winter.
Soothing immune drink
You need:
- 2.5cm piece of fresh ginger root (no need to peel it)
- 1 cup water
- 1 tbsp freshly squeezed lemon juice
- 1 tbsp honey
How to make:
- Place the water into a saucepan. Grate the ginger into the water, then boil for five minutes. Remove from heat.
- Let the water cool enough to be able to drink, then strain and pour into a mug. Add lemon and honey, and mix well until the honey dissolves.
Tip: Don’t add the lemon or honey to the boiling water, as this will destroy the vitamins and minerals in the lemon and honey.
Lemon and chia seed loaf
You need:
- 1½ cups almond meal
- ¼ cup coconut flour
- ½ tsp salt
- 1 tsp baking soda
- 3 eggs
- ¼ cup honey
- ¼ cup coconut oil or butter
- ½ cup lemon juice
- Zest of 2 lemons
- ¼ cup milk
- 1 tbsp chia seeds
How to make:
- Preheat oven to 180°C and line a loaf tin with baking paper. Set aside.
- In a large bowl, combine almond meal, coconut flour, salt, and baking soda. Stir together.
- Add the eggs, honey, coconut oil or butter, lemon juice, lemon zest, and milk. Stir until smooth.
- Add in chia seeds and pour the mixture into the loaf tin. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. The edges should be slightly brown.
Zesty lemon bliss balls
You need:
- 1 cup cashew nuts
- 1 cup desiccated coconut
- Zest of one lemon
- Juice of half a lemon
- ½ tsp vanilla extract
- Pinch of salt
- 2 tbsp honey
- Extra desiccated coconut for rolling
How to make:
- Place the ingredients into a food processor and blend until the mixture resembles sticky crumbs.
- Use your hands to shape the mixture into balls.
- Roll the balls in the extra desiccated coconut and place in the fridge to set.
- Store bliss balls in an airtight container in the fridge.
